Ewan McGregor’s Zesty Summer Pasta with Arugula & Lemon

  • 8 oz. penne or farfalle
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1 ½ cups fresh arugula
  • 1/4 cup shaved Parmesan
  • Salt & pepper to taste
  • Optional: toasted pine nuts for garnish

Cook pasta according to package instructions. Drain and set aside. In a large pan, sauté garlic in olive oil for 1 minute. Add lemon juice and zest, then stir in arugula until just wilted. Toss in the pasta and Parmesan, season with salt and pepper, and top with pine nuts if desired. Serve warm or chilled.
